This array of teas pays homage to holding to the United Kingdom tradition of High Tea: the serving of tea with a meal after a workday that ended around 5 p.m. Teas that made the table at this time were served with heavy meals that often included a variation of: meat dishes such as steak and kidney pie; fish such as pickled salmon; baked goods such as crumpets; vegetables such as potatoes or onion cakes.
